Food Revolution: Healthy Recipes for Picky Eaters!

Food Revolution Day is here! Let’s celebrate by eating healthy and choosing nutritious, real foods. This is easier said than done when you have little ones. For every child that eats everything (including dirt) there is the one that only wants chicken nuggets. Here we have three tried and true recipes from our very own staff!

Chicken Tacos with Corn Salsa & Grilled Veggies

You had me at taco. Seriously though, these tacos are delicious and filled with all sorts of good veggies. The best part: if one of your tikes doesn’t like a certain ingredient it’s easy to remove. We have Betty, one of our medical assistants, to thank for this amazing recipe. Thank you, Betty!

Food Revolution 2

Ingredients:

1 Cooked Grilled Chicken Breast, chopped

2 Corn Tortillas

Shredded Monterey Jack Cheese

1 Avocado, small chunks

1 Green Bell Pepper

1 Red Bell Pepper

1 Red Onion

½  Jalepeno Pepper, chopped

Cilantro, chopped

½ Lemon or Lime

½ tsp. olive oil

Ground pepper

Salt

A jar of your favorite salsa

Instructions:

Corn Salsa  In a bowl mix together-  chopped cilantro, a little red onion chopped, lemon or lime juice, salt & ground pepper to taste.

Cut up some fresh ripe avocado into small chunks, set aside.

In a pan over medium flame, sauté ½ tsp olive oil, red onion, red bell pepper & green bell pepper.

Now take your warm corn tortilla and fill it with some chicken meat, grilled onion/peppers, shredded jack cheese, Corn Salsa, avocado, and pour your favorite salsa on top of it all & ENJOY!

Healthy Pizza

This recipe is from Delia, who has been with Bakersfield Pediatrics since 2011.  Delia has two children who love these healthy pizzas. We love them because they are super simple to construct so kids can help in the fun too. This recipe can be easily customized by adding toppings based on you and your kids’ taste.
Food Revolution 1

Ingredients:

1 Wheat Tortilla

2 to 3 Tablespoons of tomato sauce

¼  cup Shredded Cheese (Your favorite flavor of cheese)

½ cup  – cut up cooked chicken meat

Sliced olives (optional, we added green peppers)

Instructions:

Spread the tomato sauce all over the wheat tortilla. Sprinkle shredded cheese all over the tortilla.

Sprinkle the chicken all over the cheese & tortilla. If you like olives or any other vegetables, sprinkles those on top of tortilla. Heat in oven at 350 degrees for 5 to 10 minutes.

Watch carefully…it is ready when cheese is melted.  Enjoy!

Sweet Potato & Ground Turkey Skillet

This recipe only requires one pan! It’s also delicious and a great way to get kids to try the extremely nutritious sweet potato. This recipe is brought to you by Kristen, a nurse practitioner with three little ones, so you know this recipe has been tested.

Food Revolution 3

Ingredients:

2 tbsp extra-virgin olive oil

1 lbs extra-lean ground turkey

1 tsp clove garlic, minced

½ cup onions, diced (optional)

1 ½ cup sweet potato, diced

Salt and pepper

½ cup shredded mozzarella cheese

Instructions:

In an oven proof skillet, heat olive oil over medium high heat.

Add ground turkey and garlic. Stir occasionally and cook for about 10 minutes.

Add onions and cook until onions are gold brown.

Add the sweet potato, salt and pepper.

Cover the skillet and cook until they are tender. Don’t forget to stir occasionally. If necessary, add more olive oil or a little bit of water to cook the sweet potato.

While the sweet potato is cooking pre-heat the oven to 375 degrees.

When the sweet potato is tender, add shredded mozzarella cheese and place the skillet into the oven to melt the cheese.

When the cheese melts, remove from the oven.
